Steeped in tradition, done exclusively by women from generation to generation, and introduced to young ladies as a rite of passage into adulthood, Ebonyi salt is one of Africa's hidden treasures. Ebonyi State is known as the "salt of the nation" in Nigeria because of its huge natural salt deposits in Lake Okposi and Lake Uburu. This salt is pure, nutrient-dense, and has a superior flavor profile. Its entire production process is a labor of love, done exclusively by women. It is a laborious, intentionally non-modernized, time consuming process that involves producing salt with ancient methods of cooking down brine in enamel basins on burning firewood until the water evaporates and only the salt remains.
The brine is usually collected in earthen vessels that also serve as a seive. The women of Ebonyi carry these vessels on their heads home to cook down the brine. In a day, they make multiple trips to the lake. The salt sometimes takes days to be ready. After the salt is ready, it is hand molded in lumps, and kept close to a fireplace. After the mild smoked flavor has been imparted, the salt is further sun-dried.
Lastly, Ebonyi salt is not only used for cooking but also used for medicine. Some use it as an antidote to poison, in addition to using it in other herbal remedies. It contains no artificial ingredients. It is as pure as salt can be.
Historical fact: During the Biafran/ Nigerian Civil War, salt from Lake Uburu and Lake Okposi was used in the entire Eastern Nigeria when salt became scarce. Ebonyi salt was also very popular during Nigeria's pre-colonial era.
