Ofada/ Ayamase Oil
Ofada oil is pure, organic, cold-pressed West African palm oil (Elaeis guineensis) heated till the color changes from red to caramel. The heating changes the flavor of the palm oil, making it more pungent for use in certain traditional Nigerian recipes such as the beloved Ofada Stew/ Ayamase popularly eaten in Western Nigeria. Ofada oil can also be used in making Ewe Agoyin sauce, Buka stew, etc. A little use of the oil imparts a unique flavor, and it can be used alongside other cooking oils.
