The king tuber mushroom (Pleurotus tuber-regium) is an edible gilled fungus native to Africa. Pleurotus tuber-regium powder is used in Eastern Nigeria as a soup thickener. It swells in water and adds bulk to soup. It can be used all by itself to make soup e.g. "ofe osu" , or it can be added to egusi soup to give the soup more bulk. It can also work as a substitute for thickeners such as achi (Brachystegia Eurycoma) and ede (cocoyam powder).
