Zomi oil is made by boiling ripened, freshly harvested palm fruit for about 40 minutes until it becomes very soft. The cooked fruits are then transferred to a mortar and gently pounded with a pestle, after which the juice is squeezed out and boiled again till the fresh oil floats on top. This fresh Zomi oil is scooped out and bottled afterwards.
